1. Chocolate Heaven Ice Cream
• 4 large eggs (separated)
• 1 ¼ cups thick whipping cream
• 1 cup of water
• ½ cup erythritol powder
• 5 oz dark chocolate (sugar free)
• 2 oz cocoa butter
• 1 tbsp vanilla extract (sugar free)
• ¼ tsp cream of tartar
Fill a small saucepan with 1 cup of water. Place a heatproof bowl on top of the saucepan and melt chocolate and cocoa butter. Set aside and allow it to cool.
Beat the egg whites with cream of tartar; when slightly thickened mix in erythritol and beat until stiff peaks are formed.
In a separate bowl, whisk cream until soft peaks are formed.
In another bowl, mix egg yolks and vanilla.
Add ⅓ of the egg whites to the cooled chocolate and mix well. Gently fold in remaining egg whites.
Slowly stir in egg yolk mixture and fold in the whipping cream until a smooth chocolate mousse is formed.
Transfer mixture to a lidded container and freeze for 5-6 hours.

2. Superb Summer Strawberry Ice Cream
• 2 cups thick whipping cream
• ¾ cup strawberries (fresh and chopped)
• ⅓ cup swerve
• 2 tbsp sour cream
• ½ tsp vanilla extract
Add all ingredients to a blender and blend until smooth.
Pour into a lidded container and freeze for 5-6 hours.
Before eating, defrost for 20 minutes.
